On The Juice

Vegetable and fruit juice, that is. Fresh juice is a fabulous way to get an extra boost of vitamins, minerals, enzymes, phytonutrients, and ENERGY. You’ll notice the extra zing immediately.

Recommended juicer: Breville Juice Master Plus. This is the juicer in our household, and is doing the trick fabulously. Has a large spout that can fit big chunks of produce and is pretty easy to clean. Runs at about $200.

The Friendly Green Giant Juice:

Don’t let the colour of this juice scare you. There’s a sweetness that sets off any strong green veggie taste. This makes 32 ounces of juice = 1L = 2-4 servings.

Ingredients:

– big fistful of kale

– big fistful of spinach or romaine

– 2-3 stalks of celery

– 1 large cucumber

– 1 large carrot

– 1 apple (cored)

– 1 pear (cored)

– 1-2 limes (peeled)

– 1/2 inch – 1 inch chunk of ginger (peeled)

Instructions:

Peel and core your produce. Juice your produce from softest to hardest consistencies – leafies first. Run your pulp through one time to get more bang for your buck. Rinse juicer as soon as you’re done so you don’t have a pulp covered mess to scrape off later 🙂 Drink juice immediately or store in mason jars with juice poured right to the top of jars to prevent oxidizing. Store up to a day to get the freshest and most nutrient rich juice.

What to do with your extra fiber packed pulp:

– put it in your smoothies and shakes

– add to pasta sauces, lasagna, chili, stews, and soups

– toss it in while baking muffins or a cake
